Chicken Alfredo Soup

Ok so winter has made itself very known in Calgary and I’m trying my hardest to embrace it even though I really don’t want to (but I mean, who does?). I decided to cook up some Chicken Alfredo Soup (and lots of it) to warm up during the long weekend! It’s creamy, pasta-y, and just plain delicious. Try it for yourself + tell me what you think!

Ingredients – Recipe serves 4.

  • 2 tablespoons butter
  • 1 onion, diced
  • 3 cloves of garlic, minced
  • 1/4 cup flour
  • 4 cups chicken stock
  • 1 cup heavy cream
  • 1 cup shredded parmesan cheese
  • 1 cups broccoli florets, cooked
  • salt
  • pepper
  • 1 cups cooked chicken, diced or shredded
  • 2 cups uncooked egg noodles

 

Directions

  1. In a large pot over medium heat, sauté the onion and garlic in the butter for 2-3 minutes
  2. Whisk in the flour and cook, whisking constantly for 2 minutes until bubbly
  3. Whisk in the chicken stock and cream and bring to a simmer
  4. Add the noodles and simmer for 10 minutes until pasta is cooked. Stir in the broccoli, chicken, and parmesan
